Macchie Santa Maria Cantine - Donorè - Irpinia Falanghina Spumante DOC

 

This variety produces intense aromatic wines with deep fruity aromas of pineapple, peach, and apple that fade into a second tone with a floral touch and citrus, toned with honey aromas and freshly cut grass. The sparkling version shows a lively and persistent bubble, delicate on the palate and easy to drink. Crystal clear colour and very bright, with citrus and hints of white flowers.

    Production Area: Montemiletto, Irpinia, Campania.

    Type of Soil: medium mix, clay.

    Exposure: South-East.

    Altitude: 300 - 400m asl.

    Training system: Guyot.

    Grape Harvest: last half of September.

    Age of Grapevines: 15 - 20 years.

    Technique: First Fermentation: at 15°C for 15 days in stainless steel 316 containers.  Method and duration of refermentation: Charmat method (Martinotti) 4 months of refermentation at about 5 Bar pressure in the autoclave after adding new yeasts; (Brut) oenological operations for the stabilization of product: clarification, refrigeration followed by filtration.

    Recommended Food Pairings: aperitifs, cocktails, fish dishes and desserts.

    Serving Temperature: 10°C.
