Harvest: manual selection. 40 Q. litres per hectare. 25,000 bottles per year.
Technique: Cordone speronato. The process of making Nobile wine takes approximately three years and a great deal of effort and dedication, it is a very special wine. Grape selection is very important and only the best grapes are harvested, therefore production is quite low (approx. 50-60 Q per hectare). Spontaneous fermentation happens thanks to natural yeasts in concrete tanks without temperature control. There is prolonged contact with the skins. The wine is not filtered in order to maintain its characteristics and there is a low use of sulphites. The wine then spends 18 months in oak barrels, followed by a further 12 months in the bottle.
Alcohol Content: 13.5% vol.
