Guyot and Cordon.  The grapes were harvested by hand.  The best grapes, after a careful selection in the field are placed in small boxes and transported to the winery where they will be placed on mats.  There they stay until they are properly dried in preparation for the production of our sweet wine. Without destemming, a gentle pressure is then applied which allows us to extract the precious liquid, which is transferred into small casks of chestnut and oak.  There it rests for a minimum of 4-5 years, before being bottled for a further refinement of at least 12 months.

Altitude: Average hill 100-200m above sea level

Vineyard Exposure: East - South East

Soil Type: Sediment marine fossils, sandy with a good clay content and a presence of organic matter

Harvest: After mid-October, harvested by hand. 3600-4800 plants per hectare.  

 

Meditation wine, ideal with pastries, sweets and desserts but also with spicy food and hard cheese.

Recommended Glass: tulip rim, small dessert

Service Temperature: 12°-14°C

Alcohol Content: 17% vol.

Organic Production: wine from organically farmed grapes. In 2000 the company joined the project Biological cultivation, according to which the use of synthetic chemical pesticides for fertilization is prohibited. This is also as required by current legislation under the control of the Certification Q, for the Control of Biological Productions, an organization authorized by the Ministry of Agriculture and Forestry.
