Podere Volpaio "Terre De’ Pari ” Chianti D.O.C.G Riserva - Organic 2009

 

This reserve has a beautiful deep ruby red colour embellished with garnet, served in a large glass it offers intense floral aromas with notes of spice and ripe red fruit with just a hint of vanilla in the background. Silky and encompassing on the palate, with a good consistency and persistence.

    Grapes: Sangiovese (90%) Canaiolo (5%) and Malvasia Nera (5%)

    Production Area: Montalbano Hills - Vinci 

    Altitude: Average hill 80-200m above sea level 

    Vineyard Exposure: East - South East

    Soil Type: Sediment marine fossils, sandy-clay, pebbly sandstone 

    Harvest: First week of October, harvested by hand. 3600-4000 plants per hectare.

    Technique: Guyot and Cordon.  The freshly harvested grapes, destemmed and gently pressed, were introduced into stainless steel tanks. There we proceeded with the maceration phase for 16-20 days, with careful management - level mining operations, by pumping and delestage at temperatures not exceeding 29°C. Sometimes we even partially remove the liquid in order to optimize the extraction of colouring substances and tannins. When alcoholic fermentation is complete the wine is stored in stainless steel tanks first and then in concrete for at least 24/36 months.  After this it is transferred into small French oak barrels of 225 litres. The wine remains in wood for about 3 months, after which it is aged in the bottle for about 8/10 months.

    Recommended Food Pairings: Large dishes of roast meat, game, grilled steak, stews and very mature cheeses.

    Recommended Glass: Goblet wide at the rim, Bordeaux style

    Service Temperature: 18°-20°C.

    Analytical Data: Dry Extract 33.0 g/l. Total SO2 89 mg/l.

    Alcohol Content: 13.5% vol.

    Organic Production: The Chianti Terre Dé Pari 2005 Reserve, is a wine from organically farmed grapes. In 2000 the company joined the project Biological cultivation, according to which the use of synthetic chemical pesticides for fertilization is prohibited. This is also as required by current legislation under the control of the Certification Q, for the Control of Biological Productions, an organization authorized by the Ministry of Agriculture and Forestry.
