Guyot and Cordon.  The grapes were harvested by hand. The best grapes, after careful selection in the field are placed in small boxes and transported to the winery where they will be placed on mats, where they stay until they are properly dried for the production of our sweet wine. The grapes are subsequently gently de-stemmed and the liquid is then transferred to small casks of chestnut and oak.  There is rests for a minimum of 3 years, before being bottled for a final refinement of at least 3 months.

Altitude: Average hill 100-120m above sea level

Vineyard Exposure: East - South East

Soil Type: sediment marine fossils, sandy-clay with a good clay content, fossil heavy and good presence of organic matter.

Harvest: After mid-October, harvested by hand.  3600 - 4800 plants per hectare.

 

Meditation wine, ideal with dry pastries, sweets and desserts but also with hard cheese and dry pasta.

Recommended Glass: tulip goblet, small dessert. 

Service Temperature: 12°-14°C.
