Vineyard: 5.5 hectares in production. Average age: 12 years. Density 2,200 vines per hectare. Crop yield 9,000kg per hectare. Average 20,000 bottles per annual production.
Soil profile: Deep soil with a silty- loam texture, alkaline with rich in limestone
Technique: Spurred Cordon. The clusters are de-stemmed and pressed, the must ferments for 7-9 days at a controlled temperature, with regular pumpovers and délestage. The wine is then pressed off and racked into steel tanks for malolactic fermentation and maturation. Maturation in steel. Bottle ageing: 3-4 months.
Recommended Food Pairings: Can be enjoyed slightly chilled in the summertime. Appealing and lively, ideal with roast beef, tartars, festive turkey, chicken salad, and soft cheeses.
