Soil Type: Breeding and Espalier tree on sandy, volcanic soils arranged in small terraces. There are vast fluctuations in temperature from day to night.
Harvest: Manual harvest in the first ten days of October; short cold maceration of the grapes with soft pressing and low temperature fermentation. 70-80 quintals per hectare yield.
Made with native grapes from Etna, grown in espalier. The harvest of grapes, like all farming operations, still takes place by hand. Short, cold maceration of the grapes with soft pressing and low temperature fermentation. Ageing on fine lees for 4 months.
