Soil: clayey-salty.
Harvest: September-October, hand picking.
Technique: Guyot training system. Fermentation with 25 days' maceration. Malolactic fermentation. 28 months ageing in French oak barrels and steel tanks.
Recommended Food Pairings: game, red meat, medium-long aged cheeses.
